The most flexible direct prover unit we offer, this standalone 'reach in' cabinet offers a consistent controlled fermentation to baking sheets or dough trays. With heat and humidity elements and a straightforward manual fill water system, this unit, constructed entirely from stainless-steel, also features a full height glass door for complete visibility throughout the proving process. The very simple-to-use controls allow this prover to work well within a busy environment, where workflow can be managed in a dynamic manner. A maximum of 22 tray capacity and the ability to easily switch the configuration between 18" x 30" and 40cm x 60cm trays, this prover is a straightforward prover for ease of use within a craft bakery environment.
